Directions
              - In a large skillet, sauté olive oil, onion and garlic for 5 minutes over medium-high heat.
 - Stir in potatoes and carrots. Cover and lower and simmer for 5-7 minutes or until softened.
 - Add remaining vegetables and spices. Cook for an additional 5-7 minutes.
